Here is how you make Smothered Sweet Potatoes:

Scrub & poke the sweet potatoes with a fork before putting in the microwave. Heat until the potatoes are soft all the way through the center.Chop a medium tomato (about 3/4 cup worth) & 1 green onion stalk. Add to a microwave soft bowl. Stir in 1 cup of drained/rinsed black beans, cumin & tobasco sauce.Cover with plastic wrap & heat for 2 minutes. Stir & mash slightly with a fork.Slit open potatoes & spoon half the bean/tomato mixture over each potato.
