1 cup Boiling Water
3 cups finely chopped fresh Parsley
1/4 cup finely chopped fresh Mint
1/4 cup minced Scallions (or green onions, bulb and all)
2 Medium Tomatoes, seeded and diced
(Diced Cherry Tomatoes are excellent, too.)
1 Medium Cucumber, seeded and diced.
(English Cuke is nice here, too.)
1/2 tsp Salt
1/4 tsp ground Black Pepper
4 Tbsp Fresh Lemon Juice
3 Tbsp Olive Oil (I like an extra Tbsp here.)

Here is how you make Bob's Tabouleh Make-Over:

Pour the Bulgur into the boiling water, stir, cover, and remove from heat. Let set 60 - 70 minutes so, checking around 50 minutes to see if needs stirring to mix water and grain. Drain well to get rid of any excess water. Pouring into a fine-mesh colander / strainer sitting in a bowl works well for this.In a large bowl, combine all the other ingredients EXCEPT the Olive Oil and put in the 'fridge for at least an hour before serving.Just before serving, add in the Olive Oil and mix well.Can be plated and dressed with a small sprig of Parley or Mint if desired.Serving Size:?6 1/2 (+/-) 1-Cup Servings
