The ingredients for Cajun Okra and Tomatoes are:

3 oz. andouille, cut into 1/2" cubes
1 small onion, chopped
1 large jalapeno, seeded (if desired) and chopped
1 clove garlic, minced
2 c fresh okra, sliced
1 c fresh tomatoes (I used cherry tomatoes), chopped
Cajun Seasoning
Water




How Do I Make Cajun Okra and Tomatoes?

Here is how you make Cajun Okra and Tomatoes:

Render out the sausage over medium-low heat until some of the fat cooks out into the pan. Add the onion, pepper & garlic and saute until onion is translucent. Add the okra, seasoning and approx. 1/2 cup of water. Bring to a boil, cover, reduce heat and simmer about 20 minutes or until okra is tender. Add the chopped tomatoes and taste for seasoning and adjust as desired. Cover again and cook about 5 minutes or until tomatoes are just tender.I don't really know how many 1-cup servings this makes, but it makes two servings for me, so that's how I calculated the nutritional info.The best of summer in a bowl!!!Number of Servings: 2Recipe submitted by SparkPeople user PSWAP57.
