YOU CAN ADJUST THE INGREDIENTS AS YOU LIKE.I don't know if I added the turkey sausage right, I used a 1 lb package of Louis Rich turkey sausage, serving size is 2.5 ounces @ 110 calories a serving. The package is 6 servings, the same as the recipe.I added extra Parmesan and sprinkled the tops with red pepper flakes for more flavor.You can use whatever ground meat you like.This can be a side dish, main dish, you can use this for stuffed peppers or stuffed eggplant.

1 lb Turkey Sausage
1 Zucchini about 12 inches long or 6 medium ones
3 TBS Olive Oil
1/2 cup chopped Onions
3 cloves Garlic,minced
1/2 cup chopped Mushrooms
2 TBS dry White Wine
2 Tomatoes diced
3 TBS Basil, chopped, fresh
2 tsp Rosemary,
3/4 cup grated Parmesan Cheese
1 Egg, lightly beaten

How Do I Make Stuffed Zucchini with Turkey Sausage?

Here is how you make Stuffed Zucchini with Turkey Sausage:

1. Cut Zucchini half lengthwise. Scoop out insides, leaving shells about 1/4 inch thick. Reserve about 3/4 of the insides.2. Heat 2 TBS of olive oil in a skillet on medium high heat. Saute onion and garlic until soft. Add mushrooms and reserved zucchini insides, and saute another 2 minutes.3. In a separate skillet heat a TBS of olive oil on medium high heat. Add the ground turkey. Lightly brown the turkey, stirring only occasionally. After the turkey browns on one side, stir it so it has a chance to brown on other sides. Cook until the ground turkey is lightly browned., about 6 minutes. Stir in the onion and mushroom mixture. Add the wine, stir in tomato., basil and rosemary and cook 1 minute longer. Drain any excess fat. Remove mixture from heat and set aside.4. When mixture has cooled, add cheese, egg, salt and pepper. Fill zucchini shells with mixture. Place halves into baking dish and add 1/4 inch of water. Sprinkle with chili pepper flakes IF DESIRED. Bake in 375 oven for 40 minutes, until golden brown. Remove zucchini from pan and serve while hot.Serve with rice if desired.I used 7 small marrow vegetables in place of the zucchini and put approximately 2 TBS of mixture in each hallowed out half.
