Here is how you make Veggie Barley "Risotto":

Melt the coconut oil over medium heat and saute the onion until translucent. Add in the wine, tomato, garlic, and any greens that require more cooking (kale or collards, for example). Simmer on medium-low until the wine is reduced to almost nothing. Add in the cooked barley and any greens that cook fast (chard, spinach). Stir well. Add in the creamer and cheese, stirring until the cheese is melted and creamer is reduced.
