The veggies should resemble a corn beef hash minus the corn beef and potatoes. In total I had one full cup of grated squashes.Spray your skillet with nonstick spray and set it over medium heat. Throw all of your veggies in, covering the entire pan evenly. I used my big 14in. skillet for this. I let it all cook down for about 15 minues. There is a lot of moisture from the squahes, but, it will dry up after a while. I added salt, pepper and thyme as it cooked. Be generous with the pepper so you get a little kick! I tuned it down to a medium low heat and let it cook about another 15 minutes. When it looked dry but mushy all at the same time, I drizzled on some olive oil and let it get a bit crusty. It can't really cook too long, the flavors get better and better the long it is over the heat.In no way will this replace a corn beef hash. It was something I thought I would try out with what I had in the house. I it with a black bean cake with a sunny side up egg over the top (not in total calorie count.)
