Add in chopped onion, minced garlic, and sliced carrots. Sprinkle in salt and pepper. Saute until translucent. Add in mushrooms, saute until the start to soften a bit. Pour in chicken stock, and quinoa. Bring to a boil, then turn back heat to a simmer. (you may need to rinse your quinoa...read the instructions on your package). Simmer for approx 15 minutes. While simmering add cilantro, spinach, and peas to a bowl. After the quinoa is cooked pour it over the spinach and cilantro.
