Over medium heat, Saute onion, red bell pepper, carrots, in olive oil, for about 3 minutes, add remaining vegetable and stir,cook an additional 5 minutes, add spices and quinoa, stir, now add in broth, reduce heat and allow to simmer on low for approx. 20-25 minutes, until all liquid is absorbed.
