2 TBSP instant dry yeast
4 cups all purpose, whole wheat flour
Another 3 cups whole wheat flour, plus 1 reserved cup
1 tsp salt
2 large eggs
4 TBSP sugar
3 TBSP olive oil
3 cups lukewarm water
1/2 cup ground flaxseed
1/4 cup chia seeds


How Do I Make Whole Wheat Buns with Flax and Chia Seeds?

Here is how you make Whole Wheat Buns with Flax and Chia Seeds:

You will need 3 large mixing bowls. In the first bowl, combine yeast with the first 4 cups flour, and set aside. In the second bowl, combine 3 cups flour with the salt, set aside. Reserve the remaining cup of flour for kneading the bread. In the third bowl, beat together eggs, sugar, and olive oil. Stir in warm water. Add ground flaxseed. Once combined, stir in the flour and yeast from bowl number one. Next add the flour and salt mixture, until dough begins to form. Knead dough for 5 minutes, adding remaining cup of flour as needed, and incorporating chia seeds as you knead.Place dough in a greased bowl, and allow to rise for 15 minutes. Punch it down, and allow to rise for another 15 minutes. Shape into 36 equal sized balls (I use 3 baking trays with 12 buns on each tray.)
