What Are The Ingredients For Zucchini Relish Recipe?The ingredients for Zucchini Relish are: 2 large zuccini, ends trimmed, washed and grated (Aprox. 5-6 cups)2 c. onion, very finely chopped 2 1/2 tbsp. coarse pickling salt (non-iodized) 1 each small yellow and small red bell pepper, seeded and chopped like the onion 1 1/2 c. white vinegar 2 c. granulated sugar 1 tbsp. celery seed 2 tsp. corn starch 1 1/2 tsp each dry mustard powder, tumeric, and nutmeg 1/4 tsp. black pepper How Do I Make Zucchini Relish?Here is how you make Zucchini Relish: Combine the zuccini, onion and salt in a bowl. Stir well, cover, and let stand over night on counter. Drain in a fine colander (or sive), pressing to remove the excess liquid. Rinse under running water while stirring the vegetables, and drain well again. Pour the drained vegetables into a pot. Add the remaining ingredients, and stir well. Boil gently, uncovered, for 30 minutes, stirring occasionally. Pour into 1 cup. (1/2 pint) mason jars, seal, and process in a hot water bath for 5 minutes. Makes 5-6 jars. Serving size is 1 tbsp (based on 5 cups total volume).
