Here is how you make Almond Joy:

Chop almonds and toast in oven. Set aside to cool. Melt coconut oil and honey in large saucepan over low heat. Stir to combine, remove mixture from heat. Stir in 3 - 4 cups coconut. Press coconut mixture into 9 x 13 pan and refrigerate. Melt chocolate over double boiler. Spread chocolate over coconut mixture and sprinkle with almonds. Refrigerate until set. Cut into bars.
