Soak almonds in water overnight or 8 to 10 hrs.Soak medjool dates10 to 30 minutesDrain almonds and place in blender with 1 1/2 cups of water, date and vanilla extract.Blend on high speed until very smooth.Add remaining cup of water and blend until smooth.With either a sprout bag, cheesecloth, or fine mesh strainer, strain the milk through and press the pulp to extract as much milk as possible. You may have to do small portions at a time. Discard the pulp and transfer the milk to a sealed container.
