Weight Watchers Mexican Style Shredded Cheese, 1 cup (or any light shredded cheese)
Wispride Horseradish Cheese Spread, 10 tbsp

1 tsp ground Cayenne pepper (or more to taste)
Jalapeno Peppers, 25 pepper
Egg Substitute, 1/2 cup
Emeril’s Original Essence, 6 tsp
Flour, white, 3/4 cup
Kikkoman Japanese Style Bread Crumbs (Panko), 3/4 cup
4C Salt Free Seasoned Bread Crumbs, 3/4 cup (or your favorite bread crumbs)

Here is how you make Jalapeno Poppers (Baked!):

Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper and set aside. In a bowl or food processor, cream together the cheeses, cumin, and cayenne. Wearing gloves to protect your hands, slice each jalapeno pepper in half lengthwise, then cut each half into quarters. Remove veins and seeds, and lay pepper quarters on a baking sheet - I can usually get 50 each on 2 baking sheets.Remember not to touch your eyes!In a small bowl, beat together the egg substitute and 1 teaspoon of the Essence. In a shallow dish, combine the bread crumbs, panko crumbs, and 4 teaspoons of Essence. In a third dish, or in a plastic zip top bag, combine the flour and remaining 1 teaspoon of Essence. Spread about 1/2 to 1 teaspoon of the cheese mixture into the middle of each jalapeno half. One at a time, dredge in the flour (I find this easiest to do by shaking 8 - 10 filled peppers in a baggie), dip each into the egg mixture, then dredge in the bread/panko crumbs, pressing to coat. Place the coated peppers, cut side up, on the prepared baking sheet and bake until the filling is melted and the crust is golden, about 25 - 30 minutes.Serve with fat free ranch dressing, Chinese duck sauce, or any dipping sauce you prefer.Number of Servings: 100Recipe submitted by SparkPeople user JANESAYS2006.
