Here is how you make Mini Chocolate Banana Muffins:

This recipe uses apple fiber and stevia in place of 1 cup of sugar.The night before baking, the apple fiber must be prepared. Place cheesecloth over a colander and place in a bowl. Empty a jar (300 mL will leave left overs) of unsweetened applesauce onto cheesecloth. Cover and let sit in fridge overnight.Combine dry ingredients. Any combination of flours (or multigrain cereals) can be used for a total of 2 cups. Grind the cracked wheat, cracked rye, and flax seeds. Mix with a fork.Combine wet ingredients. Blend butter, egg whites and stevia. Add yogurt, mashed bananas, and apple fiber.Heat chocolate in a glass dish in the microwave on medium for about 4 minutes. Stir until no lumps remain. Stir in wet ingredients. Stir in dry ingredients. Preheat oven to 350 F. Spray mini muffin tray with cooking spray. Place mini muffin cups, and spray with cooking spray. Fill mini muffin cups with about 1 tbsp of dough. Bake at 350 F for 15 minutes. Cool on wire rack. Makes about 75 mini muffins.
