Here is how you make Toasted Coconut Banana Bars:

Preheat oven to 350 degrees. Grease 13x9-inch baking pan. Combine flour, baking powder and baking soda. In a large bowl, beat the shortening and bananas until smooth. Beat in the egg, milk and lemon juice. Gradually blend in the dry ingredients. Fold in 1 cup coconut. Spread mixture evenly in prepared pan. Sprinkle remaining coconut over the top. Bake 15-20 minutes or until the top is lightly colored, and a toothpick inserted in center comes out clean.
