Here is how you make Banana-Apple Muffins:

Preheat oven to 375 F. In a bowl, combine the soy milk and the flax meal, mix and set aside (this makes a nice egg replacement). In a separate bowl, combine the flours, sugar, salt, spices, baking powder and baking soda--stir until well combined.Add the mashed bananas, apple sauce, maple syrup, vanilla and oil to the flax and soy milk mixture. Then, add the wet mixture to the dry mixture and stir until blended.
