This was my grandmother's recipe. I added the cardamom. It's healthier than what you can buy, but could be made even more so by substituting half the flour with wheat flour, 1/4 C applesauce for the oil, two egg whites for the egg and splenda for the sugar. Mix the banana, egg and oil. Add the dry ingredients and mix completely. If the batter is too thick, add 1 Tbsp of water at a time until desired consistency. Spoon into greased muffin tin (I use a spray that has flour in it, or you can use paper muffin cups). Bake at 325 for 20-25 minutes (depends on your oven).
