This was my grandmother's recipe. I added the cardamom. It's healthier than what you can buy, but could be made even more so by substituting half the flour with wheat flour, 1/4 C applesauce for the oil, two egg whites for the egg and splenda for the sugar. These are so good though, I sometimes think my family lets bananas get overripe just so I'll make them.

Egg, fresh, 1 large
Vegetable Oil, 2 tbsp
Granulated Sugar, .75 cup
Baking Soda, 1 tsp
Baking Powder, 1 tsp
Salt, .5 tsp
Flour, white, 2 cup
Cardamom, ground, .25 tsp (optional, but highly recommended)

Here is how you make Grandma's banana muffins:

Preheat oven to 325. Mix the banana, egg and oil. Add the dry ingredients and mix completely. If the batter is too thick, add 1 Tbsp of water at a time until desired consistency. Spoon into greased muffin tin (I use a spray that has flour in it, or you can use paper muffin cups). Bake at 325 for 20-25 minutes (depends on your oven). Let cool for 10, then transfer to wire rack to cool completely.Serving Size:?makes 12 regular muffins
