Here is how you make Whole Wheat Banana-Flaxseed Muffins:

Preheat oven to 375 degrees. Lightly grease muffin tins.Pour soymilk and apple cider vinegar into a bowl. Set it aside to let it curdle.Mash bananas in a large mixing bowl. Add soymilk mixture, applesauce, sugar, and vanilla extract, and mix well.In a separate bowl, mix together the flour, flaxseeds, cinnamon, baking powder, and salt. Add this to the banana mixture and use a wooden spoon to gently stir ingredients, until all dry ingredients are just moistened.Fill muffin cups 3/4 full and bake for 22 minutes.
