Makes 20 servings (2 loaves, 10 slices each).Preheat oven to 350 degrees F. Combine brown sugar, pumpkin, applesauce and eggs in a large bowl, mix well. Combine all remaining ingredients except cranberries, mix well. Add flour mixture to sugar mixture gradually. When flour is well incorporated stir in cranberries (or other dried fruit or nuts) if desired. Scoop batter into two 8x4x2 inch loaf pans coated with cooking spray.
