Makes 8 slicesLine an 8 inch cake pan - I use silicone paper. Heat the oven to 400fPut eggs and sugar in to a bowl and beat until pale yellow and increased x 3 in volume.Then slowly add the flour and baking powder passing it through a sieve from about 15 inches above the bowl - the aim is to get lots of air in to the mix.
