These crepes are based off of Alton Browns but I have switched up the flours a wee bit and made it dairy free. This recipe can easily be halved I just do it big to make some to freeze.

Here is how you make Crepes:

In a blender pulse ingredients about 15 times. Let batter rest in fridge. When it is time to cook. Heat crepe pan to medium heat. pour just enough batter to cover the pan. once the crepe is set flip to the other side. Timing on this really depends on your heat and pan.
