Fruit and Oat bars

1 ½ cups Whole Wheat flour
2 cups Steel cut oats, soaked in water (or apple juice) overnight
½ cup Dried Whole Apricots, chopped fine after measuring
1 ½ cups natural unsweetened applesauce (or raw apple run through a blender)
2 cups raw nuts, course chopped (I used pecans and almonds)
2 teaspoons raw honey
¼ cup virgin coconut oil
Good pinch of salt
And 5 scoops of protein powder or a few egg whites

Mix all of this up in a big bowl, it's dense so it works best if you use your hands. Press out in a pan lined with paper, bake at 300 till it's lightly browned. Let it cool till it's just barely warm to the touch then lift out with the paper. Watch it, these things are a bit “tender”. Then cut into bars. I made mine about one inch wide and almost 4 inches long. After they were cut I wrapped them up and stashed them in the freezer. They are a little dense but they don't taste bad.
