3 cups Oat Meal (Quaker Oats - Old Fashioned - dry)
1/4 cup extra virgin olive oil
3/4 cup Honey
1/2 cup Peanuts, dry-roasted chopped
1/2 cup chopped Almonds
1/4 cup chopped pecans
1/4 cup of Semi-Sweet Chocolate Mini Morsels Chocolate Chips
1/2 tbsp Nutmeg, ground
1/2 tbsp Cinnamon, ground
2 tsp Vanilla Extract
2 tbsp chia seeds

Here is how you make Amanda's Granola:

Preheat oven to 350 degrees. Add oats to bowl with olive oil and honey. Chop pecans, peanuts and almonds and add to oats. Add the spices and chia seeds. Mix everything together by hand. Place on a cookie sheet single layer deep (will need two cookie sheets) and cook for 8 minutes. Flip the granola and cook for 8 more minutes. Remove from oven, place ingredients on parchment paper to cool. When cool, add the mini chips.Serving Size:?Makes 12 1/2 cup servings
