How Do I Make Nancy's Granola Bars?

Here is how you make Nancy's Granola Bars:

1. Preheat oven to 350 degrees F (175 degrees C). Non-stick spray a jelly roll pan (cookie pan with sides) (I also use wax paper on top of the spray & then lightly spray the wax paper as well - it really helps when taking the granola bars out of the pan).2. In a large bowl mix all the ingredients with hands or a spoon (sprayed with non-stick spray) until well blended & all ingredients are moist. Press flat into the prepared pan. (Wax paper works really well for this as well I have even used a rolling pin lightly on top of the wax paper to get an even, flat texture on the granola bars). I like to lightly sprinkle with cinnamon before baking.3. Bake for 20 to 25 minutes in the preheated oven, depending on how crunchy you want them. Lightly browned around the edges will give you moist, chewy bars. (It will look like they aren't going to stick together - but they will!)4. Immediately after taking them out of the oven use a pizza cutter to cut into 28 portions (I have a large cookie sheet - so on a regular jelly roll plan it may be more like 24) then seal the pan with aluminum foil. The turn the pan over on a flat surface and remove the pan. Using wax paper at the beginning really helps with this step. Remove the wax paper (which should now be on top of the granola bars) and let cool. They will cool much more quickly this way & get their firmness.Number of Servings: 28Recipe submitted by SparkPeople user NEP2NFLY.
