My version of Coach Nicole's Bars -- I wanted something lower in calories and fat for a pre-workout meal. Make sure you bake it until it browns -- it took me almost an hour in my little toaster oven, but it is worth it! Once they cooled, they were the crunchy, non-falling apart bars I wanted!

Here is how you make Stacey's Granola Bars:

Preheat oven or toaster oven to 350 degrees F.Process 2 cups rolled oats in blender or food processor until they become flour-like. Mix "oat flour" with dry ingredients in a bowl.Add all wet ingredients to the dry mixture and stir until well combined.Spray a small baking dish (about 8 inches x 12 inches, or similar) with non-stick cooking spray. Add mixture to the dish, pressing it down with a spatula or fork.With an oiled knife, cut the whole sheet into 15 bars. Bake at 350 degrees for 20-30 minutes, or until slightly browned.
