I'm trying to come up with a new muffin recipe that is healthy, flavorful, and basic enough that I can swap out whatever add ons I have on hand. (walnuts for pecans, cranberries for raisins, etc...) The goal was to find a happy medium between texture and flavor. This effort resulted in a very dense muffin. I thought about using whole wheat flour but was afraid it would make it too dry. Also, the chocolate chips were an afterthought. I originally meant to use 1/2 cup raisins but only had one little 1.5oz box on hand so I tossed in the chocolate chips.The end result wasn't exactly what I was going for, but it was good enough that I would make it again. If you prefer a light, moist, cake textured muffin, then this isn't for you. But if you prefer a hearty (healthy-ish) quick bread texture that will see you through until lunch then give it a try.

1/3 cup raisins (1 1.5oz box)
1/4 cup chocolate chips (I only had semi-sweet on hand, but dark would have been better)
2 tablespoons ground flax (optional)
2 tablespoons applesauce, unsweetened (only need if using flax)

Preheat oven 400Spray muffin tin with cooking spray and set aside.Mix all dry ingredients in large bowl and set aside.Mix mashed banana, milk and applesauce in medium bowl, add egg and stir until well blended.Add dry ingredients, stir until just blended. Stir in pecans, raisins and chocolate chips. Add flax and applesauce (optional), stir until all ingredients are incorporated.Pour mixture into prepared muffin tin and bake 19 minutes or until done.This recipe makes 12 standard size muffinsNumber of Servings: 12
