Mix all dry ingredients in large bowl. Add carrots, apples, nuts, almonds, raisins and coconut and toss together. In separate bowl, combine remaining ingredients. Gently fold wet ingredients into dry ingredients until just moistened (do not over mix). Drop into prepared muffin tins (greased or with muffin cups).
