Add buttermilk to oats and allow to soak 15 minutes. Add sugar, egg, vanilla, butter, apples and pecans to the mixture. In a separate bowl, whisk together dry ingredients. Then add to wet mixture until just moistened. Scoop into 12 prepared muffin cups, bake @ 375 for 18 minutes (i have a convection type oven, so cooking temp and time may differ, original instructions were to bake @ 400 for 15 to 18 minutes)Serving Size:?makes 12 muffins
