Here is how you make Power Muffins:

Preheat oven to 375 degrees F. Line 18 muffin cups with liners.Mix grated carrots, zucchini, apples, mashed banana, applesauce, yogurt, honey and eggs together until fully incorporated.Whisk flour, protein powder, and baking soda in a separate bowl. Mix oats, coconut, craisins (or dried fruit of choice), cinnamon, salt, and ginger into flour mixture until all ingredients are coated in flour. Stir wet ingredients into flour mixture until just combined. Scoop batter to the top of prepared muffin cups. (definitely recommend using liners).Bake in preheated oven approximately 20 minutes (till muffins look dry and set on top or toothpick inserted in the center comes out clean.
