In bowl, pour boiling water over quinoa, cornmeal, raisins. Stir, cover, let sit 1 hour. (Can sit in fridge up to 8 hours.) Resulting mix will be thick. Preheat oven to 375*, oil muffin tins & set aside. Into the quinoa mixture, stir remaining ingredients. Add more water if needed and be careful not to over mix. Spoon into muffin tins and bake for 30 minutes or until lightly browned. Serving Size:?Makes 18 muffins
