About 1 1/2 cup Rice or Soy Milk
1 cup vegetable or canola oil (can sub half applesauce)
A tablespoon or two of honey

1-2 cups frozen or fresh blueberries or cranberries

Here is how you make Vegan Almond Bluberry Muffins:

Preheat oven to 400 degrees.Mix the last six ingredients (almonds through honey) together until well combined and let soak for a few minutes to soften the almonds and oatmeal.Mix the first four ingredients (Wheat Flour through salt) with a wire wisk.Add the wet ingredients to the dry. Stir in the blueberries.Add more milk if the batter is too dry (like dough). Add more flour if the batter is too wet (very thin).Pour into greased or lined muffin pan. Bake for 20 min or until golden.
