Here is how you make PB-Oatmeal-Flax NO BAKE Energy Bites:

Mix dry ingredients in medium size bowl.(If your coconut isn't toasted, is worth the time it takes to toast in a pan over med-low heat.)Then add PB, honey and vanilla extract.Fold all ingredients together until mixed well.Cover, refrigerate for 30 minutes. I actually pressed the 'batter' into a square baking pan to spread evenly, and to assist in dividing evenly after chilling. After 30 minutes in the 'fridge, it was easy to run a sharp knife through, to divide evenly into as many portions as wanted. (Seems like 25-1" balls are pretty substantial, they are rich!)Once chilled, roll into balls of whatever size you like.Store in an AIRTIGHT container and keep chilled for up to one week.Serving Size:?About a 1-Inch Ball
