Blend coconut in a dry blender like Vitamix until the consistency of butter and add honey. Divide in half. Into the first half mix the peppermint extract. Into the second half mix the cacao, vanilla, cayenne, and salt. Spread half the cacao portion into a 4x4 pan or plastic tub and set in freezer for 5 minutes to harden. Spread the mint mixture over the hardened layer and return to freezer for 5 minutes. Spread the rest of the cacao mixture on top and place in freezer or refrigerator until firm.
