I was being lazy and not wanting to fix a snack before I exercised but wanted some protein. I had tried a recipe for a no bake bar using peanut butter, oatmeal and chocolate protein powder, so thought I would try making it without the oats and with vanilla protein Powder. When I took my first bite I was immediately taken back to my childhood and the potato candy my mom used to make at Christmas. Now I can have it without guilt when I need a quick protein stack.

1/4 Cup water
1/4 Cup smooth peanut butter plus
2 T smooth peanut butter


How Do I Make Mock Potato Candy Protein Bites?

Here is how you make Mock Potato Candy Protein Bites:

Mix protein powder, water and 1/4 cup peanut butter until mixture holds together. Mixture will be stiff but should hold together when squeezed. If it does not, add water 1 teaspoon at a time until it holds together. Form a ball with the dough and place on a piece of plastic wrap or wax paper. Top with plastic wrap and roll out to an 8x11 rectangle. It will be about 1/4 inch thick. Remove top piece of plastic wrap and spread remaining 2 Tbsp peanut butter over the entire piece, leaving the top 1 inch of the longer side plain. Using the plastic wrap, with plain edge away from you start rolling into a log. Smooth seam and wrap with the plastic wrap and place in fridge for 1 hour to firm up (or freezer for about 10 minutes if you don't want to wait.)Cut into 16 equal pieces, serving size is 1 piece.Serving Size: Makes Number of Servings: 16Recipe submitted by SparkPeople user DEEDLED.
