1 flour tortilla with herbs(approx 10 inches)
3 eggs (medium size)
1 mushroom (large) chopped
3 scallions (chopped)
1oz cheddar cheese (grated)
1 ripe tomato (thinly sliced)
100g extra lean ham (chopped)

How Do I Make Helen's Quiche?

Here is how you make Helen's Quiche:

Place tortilla in a 7-8inch round baking tin (loose bottomed preferably). Add mushroom, ham and scallions. Beat eggs together with milk and pour over. Sprinkle with cheese and add slices of tomato to decorate. Bake in oven approx 210 degrees for about 45 minutes until golden on top and nicely set. Allow to cool slightly in tin until handleable. Then remove from tin and cool on wire rack so that the underside remains firm.Makes 4 generous portions.Ideal as a snack or to accompany salad for a healthy lunch.Number of Servings: 4Recipe submitted by SparkPeople user .
