The 100g Snack-attack Fruit Salad

I call this the 100 Snack attack because it's 100 grams of each ingredient, and the canteloupe and navel oranges make it really sweet and juicy, so when it's well chilled, it satisfies when the sweet-snack cravings hit hard. This is also great when my stomach is not in a happy place and all I can manage is light foods, but nothing sounds or tastes good. A fresh, juicy fruit salad can usually be forced down and kept down, and will often help get my appetite back. I make a bowl of this and put it in the very FRONT of the fridge, to tempt me every time I need it.

How Do I Make The 100g Snack-attack Fruit Salad?

Here is how you make The 100g Snack-attack Fruit Salad:

Makes about 4 very generous servings. Wash, peel and cut the canteoupe, oranges and kiwi into bites sized pieces. Cut the grapes in half and add the frozen, unsweetened blueberries whole after they are almost defrosted, making sure to include the juice. If possible, cut all the fruits over a large bowl to collect as much of the juice as you can, and add it to the salad. This will stay fresh without getting mushy for about 3 days in the coldest part of your fridge, but I've never had any left over at that point, so who knows if it would stay longer. OPTIONAL IDEAS:Toss in about half a small banana sliced in your serving (don't add to salad, will turn brown and slimey and ruin the whole salad)Toss in a half an ounce of walnuts or almonds, and a bit of greek yogurt for a high fiber, high protein breakfast. Serve with crumbled Goya Maria crackers, or graham crackers and light whipped cream for a refreshing dessert. Number of Servings: 4Recipe submitted by SparkPeople user CCKELLY3.
