(I heard crushed vitamin c tablets work just as well, and you can buy commercial fruit fresh powder.)Peel each pear, placing them in one basin as soon as it's peeled. Once done peeling all the pears, remove them from the sink (one at a time) and cut into chunks or slices (disposing of the seeds and stems). Toss the chunks/slices into the second sink as you cut. Bottleing the pears: Boil the remaining ingredients to disolve the sugar. Place the pears in the syrup to just heat through. Take out the pears with a slotted spoon and pack into sterilized jars. Using a ladle, pour the syrup over top of the pears leaving 1/2 inch headspace. Shake the jars or use a small rubber spatula and run around the edge of the fruit to remove any air bubbles. Seal and process the jars in a hot water canner for 15-20 minutes, depending on the size of the jar and fruit pieces. Makes 16 servings of 1/2 c. pear slices (1 cup total volume when you include the syrup).
