1 cup carrot, sliced
1 cup celery, finely chopped or minced in food processor
2 medium garlic cloves, minced
1/4 cup olive oil (may be reduced if you like)
1 1/2 cups frozen or fresh green beans
3 cups cooked beans (I use black & kidney)
2 cups canned or fresh diced tomatoes
8 cups of vegetable broth
2 tablespoons dried basil or 1/4 c. fresh basil

Here is how you make Heavenly Minestrone:

In a large saucepan, saute onions in oil over med heat until they get a little golden, about 5 minutes or so. Then add carrots & celery, and saute for another 5 minutes. Add minced garlic and saute for 1 minute. Stir in tomatoes, broth, canned beans, green beans, and basil. Reduce heat and let simmer for 10 minutes. Bring soup to a boil, add the alphabet macaroni, cook for the amount of time listed on the package it came in (could be 10-16 minutes).
