1/2 c dried black beans
1/2 c dried brown lentils
1/2 c red lentils
1/2 c mung beans
1/2 c dried split peas
1/2 c dried lima beans
1/2 c dried kidney beans
1/2 c dried white beans
1 c frozen edamame (soybeans)
2 c rough dice carrots
2 c green beans, cut into pieces abvout 1" long
2 c rough dice onions (white, yellow, or red)
2 c rough dice turnips
2 c sugar-free, salt-free tomato sauce
1 package frozen chopped spinach
4 T garlic salt (or, substitute chopped fresh garlic and salt to taste)
3 T chili powder (there are many chili powder blends in the spice aisles--try one!)
2 c (or more) of extra-lean cooked ham (I use a Honeybaked ham bone, which always comes with at least 2 c of meat)
3 qts water


How Do I Make Multi-Bean Soup with Ham?

Here is how you make Multi-Bean Soup with Ham:

Combine all beans (except the frozen soybeans) in a small-hole strainer. Rinse, put in large bowl and cover with cold water (water should be about 2 inches above the beans), Soak beans overnight. Strain, rinse, and put into large soup pot. Add 3 quarts cold water and the ham bone, if you are using one. Add edamame. Turn stove to high, and, while water and beans are heating, prepare and add carrots, green beans, onions, turnips, tomato sauce, and spices. When water has begun to boil, turn to simmer (so there is a little bubbling going on!) and simmer for about 3 to 3 1/2 hours, until beans are tender. Remove ham bone, remove meat from bone, dice, and return meat to pot. If you are not using a ham bone, this is the time to add 2 or more cups of chopped ham. Simmer additional 30 minutes until meat is heated through. Makes 8 to 10 quarts or 16 2-cup single servings. Freezes well.Number of Servings: 16Recipe submitted by SparkPeople user TINKYTOTS.
