sautee the Leeks, onions, garlic and olive oil until leeks become soft.Add rest of ingredients except for the tofu and milk. (I put the spinach in still frozen--if you defrost first, include liquid in soup). Bring to a boil. Reduce heat and simmer for 45 minutes.Using a blender or food processor, puree soup with tofu until smooth. Add milk and pureed soup to the pot, heat until desired tempature. Tastes good with croutons and melted cheese on top (Not included in nutritional info) Number of Servings: 8
