Cook onions, garlic, salt and thyme in oil until softened and slightly browned. Add wine and reduce for 5 minutes. Add asparagus and cook for about 5 minutes. Add stock and allow to boil gently for about 15 minutes, until asparagus is very tender. Puree the soup.Whisk the cream and egg yolks together. With the puree on low and not boiling, add the egg mixture. Stir to combine and add the lemon juice and butter. Stir until butter is melted and the whole thing is heated through again.
