Here is how you make Lovely Lentil Soup:

Saute the onion, carrot, and celery in the vegetable oil over high heat for about 5 minutes or until softened. Add the lentils and sweet potato and spices, stirring for 1 minute. Add the chicken or vegetable stock. Bring to a boil, turn down the heat and simmer, covered, for 20 minutes. Remove soup from heat. Use a potato masher to roughly mash up the vegetables in the soup, but leaving the desired texture. Alternatively, you can puree in a food processor or blender for a really smooth soup.
