Here is how you make Vegetarian Paella:

1In a large, deep skillet, heat oil over medium heat. Add the onions and saute until softened (about 5min). Add the paprika and rice and cook about 4-5min. Stirring occasionally until rice is transparent. Add broth, tomatoes, tomato paste, tarragon, basil, and oregano, bring to a simmer, and simmer for 10-15min. Add bell peppers, celery, mushrooms and peas, and cook for another 30min or until rice is cooked. Add peas and salt to taste. Cook to heat through then place in a large serving dish to serve.
