3/4 cup apple butter
1 cup flour
2 cups whole wheat bread flour
1 cup rolled oats
1/4 tsp salt
2 tsp pumpkin pie spice
1 tsp vital wheat gluten
2 tbsp melted butter
1 tbsp vanilla
1/3 cup sultana raisins, soaked in hot water and drained
1/3 cup pecans, chopped
1/4 cup toasted pumpkin seeds

Mix starter and yeast (if using) in a large bowl. Add brown sugar and apple butter and stir to combine well.Add flours, oats, salt, spice and gluten and knead for 5 minutes. Let lest 5 minutes.Add butter and vanilla and knead for 7-10 minutes. Place in a greased bowl, turning to coat. Cover and allow to rest 1 hour.Knead in the raisins, pecans and seeds, place back into the bowl. Recover and allow to rest 1 hour. Shape into a loaf and place into a greased loaf pan. Cover and allow to rise 1 1/2 hours.Preheat oven to 350F. Bake loaf 45 minutes.
