1 teaspoon ground cinnamon
1/2 Cup Raisins, optional
1/2 Cup Pecans, optional

Icing:
1/4 Cup Butter
2 Cups Powdered Sugar
1 Teaspoon Vanilla Extract
1 to 2 Tablespoons milk or half & half

Here is how you make Iced Pumpkin Cookies:

Preheat oven to 375 Mix sugar, pumpkin, shortening and orange peel together in a large mixing bowl. Stir in flour, powder, soda, salt & cinnamon. Stir in raisins and pecans. (Self Rising flour omits powder, soda & salt) Drop by teaspoonful onto ungreased cookie sheet. Bake until light brown (8 - 12 minutes). Remove to cooling rack and ice as desired.For the icing, melt butter in a 1-1/2 quart saucepan until light brown. Stir in sugar, vanilla and milk until smooth.
