In a large bowl whisk your dry ingredients: flour, baking powder and soda, and spices and set aside.In another bowl mix your egg yolk, pumpkin, brown sugar and apolesauce. Stir the milk in the pumpkin mix.All at once add the pumpkin mix to the dry ingredients and mix just until combined.In a medium bowl blend the egg whites until light and fluffy. Fold into the other batter.Using a 1/4 measuring cup ladle into a hot (med/low heat) griddle or skillet, lightly sprayed with cooking spray like Pam. Cook until almost dry on one side then flip.
