I love salmon and coming up with new ways to prepare it. This particular recipe was born out of a bare pantry. Since going gluten free, I have had to get rid of many of my stand by ingredients and my creative juices have really been kicked into high gear. The ingredients here are simple but they pack a flavorful punch and are sure to please.

Sweet Balsamic Glazed Salmon

Serves 2

2 salmon fillets

1 tbsp balsamic vinegar

1 tbsp agave nectar

salt, pepper, garlic powder, onion powder

olive oil

Season the salmon with the salt, pepper, garlic and onion. Combine the balsamic vinegar and the agave in a small dish and liberally brush each fillet. Place the salmon on a greased broiling pan and broil on the highest rack of the oven for 5 minutes. Baste the fish with the remaining vinegar and turn the oven off. Allow the fish to sit in the warm oven until it is cooked through, 1 to 3 minutes depending on the thickness of the fish. Remove from the oven and brush with remaining vinegar and serve hot.
