Here is how you make Savory Vegetarian Gravy:

In a large saute pan, heat olive oil over medium heat. Add onions and cook about 5 minutes, until they turn clear. Add mushrooms, garlic, soysauce (if using) and herbs. Saute for about 5 minutes, until onions are starting to brown. Add flour and stir well. Cook about two minutes, until flour turns light brown. Add broth and stir well. Bring heat to medium-high and cook until mixture coats the back of a spoon, about 5-10 minutes.Season with pepper and serve over your favorite side dish (like mashed potatoes!)
