125 g (4 oz) smoked almonds
1 onion , chopped
1 carrot, grated
1 tablespoon tamari
3 tablespoon rolled oats
1 egg, lightly beaten
3 tablespoon chickpea (besan) flour
1 teaspoon ground cumin
1 teaspoon ground coriander
3 tablespoons seasame seeds
oil, for shallow-frying

Here is how you make Almond Sesame Soya Burgers:

1. Soak the soya beans in cold water overnight; rinse and drain well.2. Place the soya beans in a large heavy-based pan, cover with water and bring to the boil. Reduce the heat and simmer for 3 hours or until the beans are tender. Rinse and drain.3. Place the soya beans, almonds, onion, carrot and tamari into a food processor and process for 2 minutes or until roughly chopped. Transfer the mixture to a bowl; add oats, egg, chickpea flour, cumin, coriander, and sesame seeds; stir to combine.4. Shape mixture into 10 even-sized patties. Heat the oil in a large frying pan and cook the patties over medium heat for 5 minutes on each side, or until golden and heated though. Burgers are deliciuos served with a tangy plum and yogurt sauce, or with a salad and maybe a toasted bun. NOTE: Canned soya beans may be used instead of dried ones if you are short of time (use 2 1/2 cups/160g/5 1/4 oz). Tamari is a rich soy sauce which, unlike regular soya sauce, i brewed without wheat.
