1 pkg Tofu - extra firm
2 tsp olive oil
1/2 c grated carrot
1/2 c sliced green onion
1 tbsp fresh ginger, minced
3 garlic cloves, minced
1/2 c almonds, finely ground and toasted
2 tsp sesame seeds, toasted
1 egg white, beaten
4 tsp soy sauce
2 tsp asian sesame oil

Here is how you make Hagesfeld Tofu Almond Burgers (1 4oz patty):

Slice tofu into 1 in. slices. Lay flat on paper towels to drain. Place a plate or cookie sheet with a book on top to press the water out of the tofu. Leave to drain for at least an hour. When tofu is drained, put into a large bowl and crumble into fine pieces. Add 1 tsp of olive oil to a nonstick pan, saute grated carrot, sliced green onion, ginger and garlic for about 5 minutes, or until the carrot is just softening. Add carrots, etc. to tofu mixture and stir to incorporate (and to cool the veggies down). Then add almonds, sesame seeds, soy sauce, 1 tsp of sesame oil and egg white into the tofu and mix by hand to incorporate. Scoop a 1/2 c of mixture and form into a 1/2 inch patty, then repeat. They can be a bit crumbly, so chilling these for 30 min before cooking can help. Add 1 tsp of olive oil and 1 tsp of sesame oil to nonstick pan over medium heat. Once oil is hot, add patties and cook about 3 minutes a side, or until golden brown. Do not touch the patties once they are in the pan -- only to turn them. The more you move them, the more they will crumble. Leave them alone and they'll form a nice brown crust and stick together. Serving Size:? Makes 5 4oz burgers
